โIn the first match, we had to combine Italian and Japanese cuisines. But this time, my dish will be purely Japanese,โ Chef Jung Ho-young told the cameras.
He explained his choice by noting that he and โItalianโ styles didnโt get along, so he chose to rely on his strength: braising. His goal was to elevate a classic preparation. โTruth is, Iโm great with braising,โ he said.
โI added brewed soy sauce and simmered till glossy. Thatโs when I added the burdock roots. I also cubed some tofu. And seared them with a torch. That way, theyโll be firm on the outside but tender on the insideโฆin the braise. And that way, itโs not just boring braised croaker,โ Jung Ho-young detailed his process.
He also creatively used the entire fish, asking Sam Kim for the croakerโs swim bladder, which his opponent was not planning to use. Jung modified his technique from the team round, cutting the bladder to fit more filling inside.
On the other side of the kitchen, Sam Kim took the opposite approach. He chose to recreate the dish from the team challenge but in his own distinct style, focusing more on Italian techniques. While Jung Ho-young went for a purely Japanese braise, Sam Kim prepared his croaker using an Italian poaching method. This created a direct showdown between two schools of thought, even as they started from the same point.
